Pumpkin Walnut Cookies

Pumpkin Walnut Cookies include your favorite pumpkin spice flavors with the rich, warm addition of walnut recipes. These and other pumpkin cookies recipes make excellent additions holiday gatherings and gifts.

Ingredients

  • 1/2 cup butter
  • 1 1/2 cup packed brown sugar
  • 2 large eggs
  • 1 cup pumpkin, cooked or canned
  • 1 teaspoon vanilla
  • 1 teaspoon grated lemon rind
  • 1 teaspoon lemon juice
  • 2 1/2 cups flour, sifted
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 1 1/2 teaspoon pumpkin pie spice
  • 1/4 teaspoon ginger
  • 1 cup walnuts, coarsely chopped

Instructions

  1. Preheat oven to 375 degrees F.
     
  2. Cream butter and sugars until fluffy.
     
  3. Beat in eggs, one at a time.
     
  4. Stir in pumpkin, vanilla, lemon peel and juice.
     
  5. Sift flour with baking powder, salt and spices; blend into butter mixture.
     
  6. Fold in walnuts.
     
  7. Drop by rounded tablespoons onto greased baking sheets 2" apart.
     
  8. Bake 12-14 minutes or until set. Allow  to cool 5 minutes on cookie sheets before removing to wire racks.
