Ingredients

  • 6 6 tbsp Ching's Secret Schezwan Chutney
  • Schezwan Fried Rice Masala
  • 2 2 Cups Basmati Rice
  • 400 400g Chicken with bone cut into big cubes
  • 2 2 Large Onions (sliced)
  • 2 2 tbsp Deep Fry Oil
  • 2 2 tbsp Coriander (chopped)
  • 2 2 tbsp Mint (chopped)
  • 1 1 Cup Curd
  • 1 1 tsp Red Chilli Powder
  1. Step 1: Fry onion in hot oil until golden.

  2. Step 2: Add chicken, salt, curd, Schezwan Chutney, fried onions, chopped coriander leaves, mint leaves in 2 tbsp oil and stir fry for 5 mins. Add 1 cup water and cook on low heat until chicken is tender

  3. Step 3: Heat water in a big pot. Add salt, rice and parboil it. Remove and drain the rice throughly

  4. Step 4: Spread half rice in pot and pour chicken schezwan curry. Top with remamining rice. Sprinkle Schezwan Fried Rice Masala, fried onion, cover the pot, and cook on low heat until rice is fully cooked (5-10 min).

  5. Mix before serving and garnish with coriander leaves.

I love Biryani. I agree if the exact ingredients aren't available then find the next best thing and/or compromise. It allows your creativity to come through. I would really like to make this and as far as I know Biryani is a 'process' to make but this recipe seems to simplify things and it is not that much effort to make. I will be making this soon.

This looks yummy! Our local Asian grocery carries some of the Ching's Secret line of products, and I'll ask if they carry the Schezwan Chutney and the Schezwan Fried Rice Masala or if they can order it. I'd probably use cubed boneless chicken breast for this, since we usually have that around. We normally use basmati rice, so that's on hand. Time to make a grocery run!

Biryani is a very popular and much loved dish in South Africa having been brought to these shores by Indonesian slaves centuries ago. Schezwan Fried Rice Masala is not available in Africa but I used biryani rice which we get from a local shop and which has all the spices already mixed into the rice. This Schezwan Chicken Biryani recipe is really very good. I particularly like the inclusion of mint which adds a beautifully fresh layer to the flavor.
