The possibilities are endless with this recipe. With the option of adding individual toppings, it will surely please everyone at the table. Don't like salsa? Skip it! It is a very personalized sort of meal. Although I loved this, I will say I did not care for the minute rice and next time I will just make rice ahead of time. I love the restraunts that sell "bowls" and it just became better by making them at home. I also used shredded pork in ours. Our family has to have the meat or they think they were not fed!

This chicken taco rice bowl idea is great! You could use rotisserie chicken, or any leftover shredded meat. Each person could personalize their bowl with a number of toppings. How about a few different types of salsas, guacamole, different cheeses, shredded lettuce, sour cream, tomatoes, olives, black beans, roasted corn, etc. Endless possibilities and a great idea for a party. You could serve it with chips and guacamole and salsa and add a nice dessert for a fun evening.

Well, aren't these easy little rice bowls?! The thing I like best (besides how easy they are) is the way you can add your own toppings and make it your own rice dish. I would make it like Mexican rice with cheese, salsa, olives, corn, etc. Sounds like a plan for next week!
