Mexican-style casseroles are always tasty. The recipe boasts simple ingredients with bold flavors."

NotesYou may add taco seasoning in when searing the chicken. The taco seasoning can balance the cheesy flavor and the sweetness coming from the sweet corn kernels. In addition, you may add cooked rice to the dish for a complete one-pot meal.

  • 2 pounds chicken breasts
  • 9 ounces Provolone cheese
  • 1 cup sour cream
  • 8 ounces canned diced green chilies
  • 2 ounces red bell pepper
  • 3 ounces red bell pepper
  • 3 ounces whole corn kernels
  • 2 ounces cherry tomatoes
  • 1 teaspoon Salt
  • 2 tablespoons butter
  • 1 teaspoon ground black pepper
  • 2 tablespoons vegetable oil


  1. Preheat oven to 400 degrees Fahrenheit.

  2. Prepare a 9x13 casserole dish and brush some butter.

  3. Cut chicken breasts into bite-size pieces, season with salt and pepper.

  4. Heat oil in a large skillet and add the chicken. Cook for 3 minutes until cooked through.

  5. Arrange sautéed chicken in a casserole dish.

  6. In a separate bowl, mix cheese, sour cream, and canned diced green chilies (with juice).

  7. Add chopped red bell pepper and corn to the casserole dish.

  8. Add the cheese mixture.

  9. Baked in the oven for 15 minutes.

  10. Serve with diced tomatoes.
