Beef and Potato Casserole

This casserole recipe is hearty and sure to please! Beef and Potato Casserole is a great dinner option and will keep you full for the rest of the night.

Ingredients

  • 2 pounds potatoes
  • 1/2 cup butter or margarine
  • 1/2 cup cream
  • 1 egg, beaten
  • 1/4 teaspoon nutmeg
  • 3 teaspoons salt
  • 3 onions, chopped
  • 2 pounds stewing beef, cut into 1/2 inch (1 cm)cubes
  • 1/2 cup beef stock
  • 1/2 teaspoon black pepper
  • 1 bay leaf
  • 1/4 cup dry breadcrumbs

Instructions

  1. Preheat oven to 400 degrees F.
     
  2. Cook the unpeeled potatoes until tender. Drain, peel and mash.
     
  3. Beat in 3 tablespoons butter or margarine, cream, egg, nutmeg and 1 1/2 teaspoons salt until very light and fluffy.
     
  4. Melt the remaining butter in large saucepan.
     
  5. Saute the onions for 5 minutes.
     
  6. Add the meat and cook over a high heat, stirring constantly, until the meat is browned.
     
  7. Mix in the stock, pepper, bay leaf and remaining salt.
     
  8. Cook over low heat for twenty minutes.
     
  9. Discard the bay leaf.
     
  10. In a greased casserole pan, arrange as many layers as possible the potatoes and meat mixture, starting and ending with potatoes.
     
  11. Sprinkle with bread crumbs and dot with butter.
     
  12. Bake for 25 minutes or until browned.

I am extremely disappointed with this recipe, as my mashed potatoes were nothing more than a very thick paste. I'm confused as to why the potatoes were boiled with the skins on prior to mashing. I have never used that method for mashed potatoes.
