This delicious snack cake was a winning recipe at the Iowa State Fair, so you know it has to be good! The secret to making this delicious State Fair Winning Cake recipe is to use cake flour rather than all-purpose. It's a lemon poppy seed cake recipe that's perfect to throw together as a snack with your morning coffee, dessert to bring to a potluck, or simply a sweet treat after dinner. If you love the taste of lemon desserts, you'll love this light refreshing cake.

I love poppyseed cake but haven't made it in years. This sounds like a really good old-fashioned recipe. I can't wait to try it. I like to try new dessert recipes in the Spring (lots of family birthdays, Easter, etc.) I never buy cake flour, so I will have to add it to my shopping list.

Lemon poppy seed cake or muffins are great. I've never made one before. I have never even seen a recipe. This is a pretty simple, straightforward cake recipe. Cake flour is finer and will make a difference when making a cake. You can always substitute 3/4 cup all purpose flour plus 2 tablespoons cornstarch for the cake flour.
