Oklahoma Cake

For awesome cake recipes from scratch look to the south; this Oklahoma Cake has a delicious tropical flavor combination to it. Combine those tropical flavors with cream cheese and you end up with one heck of a tasty, moist cake.


  • 3 cups flour
  • 2 cups sugar
  • 1 teaspoon soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 1/2 cup vegetable oil
  • 3 lightly beaten eggs
  • 1 can (8-ounce) crushed pineapple, undrained
  • 1 cup chopped pecans or walnuts
  • 1/2 teaspoon grated lemon peel (optional)
  • 1 cup shredded coconut (optional)
  • For the Frosting:
  • 2 cups powdered sugar
  • 1 (3-ounce) package cream cheese, softened
  • 1/2 cup margarine or butter


  1. Preheat oven to 350 degrees F. In a large mixing bowl, using a spoon, mix all cake ingredients together.
  2. Pour into greased and floured bundt pan. Bake for 40-60 minutes. Cake is done when it crusts on top.
  3. Cool on rack 20 minutes then invert. Mix all frosting ingredients together and spread on cake as soon as removed from pan.

Can this be bakd in a 9x13 pan? Also coud you use self-rising flour and omit the soda and salt? this sounds like a realllly good cake. Can't wait to try it!!

Why must this be mixed with a spoon; instead of an electric mixer?

Does anyone know why this is called Oklahoma Cake, when it is made with tropical ingredients? I live in OK and I am curious.

Instead of all the oil use sour cream or yogert,which make it lighter, but applesauce will make a different flavor to it.

Any one who can bake surely could fiqure out the last three ingretidents are for the icing .not confusing at all . Cake sounds good will make it soon.......

Your recipes look good but often have vague directions e.g. this one does not specify which are the icing ingredients

The last 3 items are the icing. Tried it. Delish and so moist!!!

I also think this sounds really good, but which ingredients are for the frosting! Little bit confusing.

Where does the "cake" ingredients stop and the icing begin?

Sounds delicious but confused about what goes in the cake and what goes in the frosting. I read postings before mine and others are just as confused. Please let us know.

Since no answer was posted yet, I would think that the frosting ings would be the powdered sugar, cream cheese and butter at the end. Anyone else think so? This does sound delicious.
