  • For the Cake:
  • 1 box yellow cake mix
  • 1 (15-ounce) can pumpkin puree
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • For the Glaze:
  • 1 jar white frosting
  • 1/3 cup maple syrup

Instructions

  1. Empty the contents of the boxed cake mix and pumpkin puree into a large bowl. Using a hand-mixer or spatula, mix until well incorporated.The batter will be very thick but will come together nicely.

  2. Pour batter into a greased 8-inch square pan. Bake at 350 degrees F for 28 minutes or until a toothpick inserted in the center comes out clean. Do not over-bake.

  3. Let cool for 5-10 minutes in the pan. Make the glaze while you're waiting.

  4. Combine white frosting and maple syrup. The glaze should be thick but pourable. Pour over the cake while still warm.

  5. Serve warm or room temperature.

I made this for dinner last night and it was a real hit with all 4 of us adults. I watched the video to assure that it really is an 8" square cake pan. The cake doesn't rise too much. Since I am not one for canned icing AND I wanted a stronger maple flavor, I used 2 Cups powdered sugar, 1 tsp Mapeline flavoring, and enough cream to make a soft frosting, then sprinkled it generously with chopped pecans. It's a definite keeper for us! I'll be sure to have everything on hand to make it in a hurry.

Pumpkin is pretty much my favorite thing in the world. I love that this is so simple to make!

What size cake mix was used to make this, since cake mixes are now much smaller than they were a couple of years ago. So far, there are no reviews from anyone who made this, so I'm wondering how this would turn out. Please advise.

Other than the maple frosting this pumpkin cake sounds amazing, but I've always wondered in recipes like this...if you don't use the eggs and oil with the cake mix doesn't it turn out too dense, or is it supposed to be like that? I'm not really a huge fan of maple or really sweet desserts so I think for the icing maybe I could add some pumpkin spice into the frosting or simply dust the cake with a touch of powdered sugar.
