Easy

Ingredients

  • For the Eclair Dough
  • 1 cup water
  • 1 stick butter
  • 1 cup all-purpose flour
  • pinch of salt
  • 4 large eggs
  • For the Filling
  • 1 (3.4-ounce) package French Vanilla instant pudding mix, plus ingredients called for on the pudding package
  • 1 (8-ounce) container whipped topping
  • For the Chocolate Sauce Topping
  • 3/4 cup milk
  • 1/4 cup butter at room temperature
  • pinch of salt
  • 1 cup sugar
  • 1/4 cup cocoa powder
  • 1 1/2 tablespoon cornstarch

Instructions

  1. Combine water and butter in a 4-quart heavy saucepan and bring it to a simmer. Once the butter has completely melted, add the flour and stir well, then continue to stir over medium heat for 2 minutes.

Note: It is important to cook it the entire 2 minutes so that the flour will cook completely. The dough will stick to the sides of the pan and then form a ball; keep stirring and cooking.

  2. After 2 minutes, remove from the heat and place dough in the bowl of an electric mixer. Allow to cool about 5 minutes. Then, with the machine running on low, add the salt and eggs one at a time, with time in between each addition. The dough will change in appearance from looking like scrambled eggs to a shiny batter. Continue to beat for about 2 minutes until it pulls away from the bottom or sides of the bowl.

  3. Spread the dough into a greased 9x13-inch baking dish, pushing it into the corners and up to the sides.

  4. Preheat oven to 425 degrees F and bake for 15-18 minutes. It should no longer look wet and should look lightly golden brown.

  5. Return the pan to the oven with the heat off, leave the door ajar and allow to cool to room temperature.

good good good good

When I saw that you had to make the dough for this fluffy cream puff cake, I lot heart. I have never been able to pull off making any baked good that calls for homemade dough. I wonder if the fill-o items in the grocery will be a good option to use.

The banana cream/sliced banana option suggested by Rnbowgrl below is a wonderful one, and it's one I'm definitely going to incorporate when I make this. My wife and I both love eclairs and this is a terrific version of one of our favorite treats. I'll probably just use a jar of the pre-made chocolate topping rather than making the one described in the recipe to make it a bit easier, plus we usually have several jars on hand.

As much as I would love to make this recipe, I have never had any luck when it comes to a homemade pastry recipe. My husband, on the other hand, is what I would call a chef and I may be able to get him in the kitchen and see what happens. This sounds yummy.

What a dreamy and super delicate dessert this is. And, if you're feeling creative, you can even try adding an extra layer of banana pudding or sliced bananas for a Boston Cream like dessert. I was thinking of trying it out in a cupcake pan instead to make individual mini pies and perhaps topping them off with some chopped nuts for texture.

Wow! doesn't this fluffy cream puff cake look a treat? So easy to make too. I like the pastry base and have never seen something made like that before. I also love vanilla pudding. Yum, yum, I can't wait to make this. I am sure I will fall in love!

Ooooh, so YUMMY!! A little bit fiddly to made but totally worth the effort! We all had seconds of dessert tonight simply because it is so lip smackingly DELICIOUS! I would perhaps suggest that when you make it you pour over the chocolate sauce right before you serve it, and not before. Do make it, though, because it is 100% luscious!
