Addictive Tropical Poke Cake

Take a trip to paradise and make this delicious cake mix recipe. Made with coconut and crushed pineapple, each bite of Addictive Tropical Poke Cake makes us feel like we are relaxing on the beach. And to make things even more heavenly, the cake is then covered with Cool Whip and shredded coconut. Take a vacation and dig in one slice at a time.


  • 1 can cream of coconut
  • 1 can sweetened condensed milk
  • 1 large can crushed pineapple
  • 1 box yellow cake mix
  • 1 small carton Cool Whip
  • 1 cup shredded coconut


  1. Bake cake as directed.
  2. Mix cream of coconut and condensed milk together.
  3. As soon as cake is done, punch a lot of holes in cake.
  4. Slowly pour cream of coconut mixture into holes and all over cake.
  5. Pour pineapple, juice and all, over cake. Refrigerate until cold.
  6. Mix Cool Whip and shredded coconut together and spread over cake. Keep refrigerated. Must be chilled.

This cake was very sweet, tasted like a coconut flavored Tres Leche cake, with Cool Whip on top. I toasted the shredded coconut so that it wouldn't blend in with the Cool Whip. It was pretty to see, but I don't think I'll make it again.
