The words chocolate and peanut butter always pique my interest. I've tried chia before and liked it, and I'm looking forward to giving this a try. Even without the blending of the chia, this looks like a really decadent yet healthy dessert. I think I would opt for the honey over the maple syrup, but that's just a matter of personal taste. I will have to try it that way, though.

The different colored layers in this pudding recipe look so pretty, kind of like some kind of turtle mousse or sundae. Since they are so healthy and wholesome, I would even serve this pudding to my son (and myself!) for breakfast, or as an afternoon pick - me - up after school. I have some vegan friends who would love this recipe.
