Pina Colada French Toast

This great breakfast recipe is loaded with the sweet flavors of the infamous pina colada. With every bite you'll taste pineapples and coconut and feel like your enjoying breakfast on the beach. Topped with fresh strawberries and powdered sugar, it's one of the tastiest recipes for french toast.

Ingredients

  • 8 thick (3/4 to 1 inch) slices French or Italian Bread
  • 1 cup sliced strawberries
  • 1 large egg
  • 1 cup La Preferida Pina Colada Mix
  • Unsalted butter for skillet
  • Powdered sugar

Instructions

  1. Heat large skillet over medium heat until pan is hot.

  2. In a small bowl, place strawberries and 1/3 cup Pina Colada Mix. Mix well. Set aside.

  3. In a pie plate or shallow pan, whisk together egg and 2/3 cup Pina Colada Mix. Soak bread in egg mixture for 20 seconds on each side. Gently remove each slice and let excess drip off. Repeat for all slices.

  4. Melt 1 Tablespoon butter in skillet, coating entire bottom. Place bread slices in skillet and cook until golden brown, about 2-3 minutes first side and 1-1/2 minutes second side. Add more butter as you cook each batch.

  5. Arrange on plates and spoon strawberry mixture down center. Dust with powdered sugar and enjoy!
