Stuffed peppers are an amazing and affordable dinner, right? My husband makes a version with red peppers. My son loves them so much he asks for them every birthday. We love the sweet flavor. I can't believe you made this with Philly cheesesteak ingredients. I am going to have to try this one out soon.

After living in Philly for the past 4 years, I cannot believe that no one, including me, has ever thought of this! Genius idea for a philly-style stuffed pepper! Yes, I have sliced peppers before when making stuffed peppers and it still works out well, so you should be good to try that!

No cooking the peppers ahead of time! I love that. Most stuffed pepper recipes tell you to do that and I always did, but wondered if I really needed to. I love mushrooms but am undecided about adding them in this. It would taste great either way. This would be great to cut out starch. You could even buy some sliced roast beef at the deli counter to save time.

I looooove Philly cheesesteaks! And, we just recently made and froze some roast beef, so this is a perfect recipe to go through some of those leftovers. I'll probably ditch the mushrooms because I don't like the consistency, but has anyone tried slicing the peppers instead of having them whole? I feel like I end up doing that anyway with stuffed peppers so might as well do it from the beginning

I've never seen a stuffed pepper recipe like this. The cheese looks gooey and the whole thing looks really good. I end up with lots of green peppers in my garden, so I will be making this next summer.
