Red peppers make such great stuffed peppers, don't they? I love the other colors too, but the reds are my favorite. They are so much sweeter and tastier than the green ones. They make me feel like I am getting a big hug from my grandma when I take a bite.

Comfort food is always a welcome surprise for dinner. You know that everyone is going to enjoy the meal. This is a variation of the traditional recipe for stuffed bell peppers. The stuffing has zucchini and mushrooms for added savory flavor. Instead of white rice, brown rice is used. Also, marinara sauce is substituted for tomato soup. In addition, shredded Parmesan cheese tops the bell peppers.

Looking forward to trying it. Similiar to my Mother's recipe however, I leave the pepper whole for stuffing.
