"Homemade beef burgers in Japanese milk buns. I’m partial to a good burger. All things minced in fact are all right in my books: meatloaves, meatballs, koftas,ragù in a Bolognese or lasagne, cottage or shepherds pies, bulgogi and let’s not forget my illicit clandestine love affair with the doner kebab. But burgers crown the list and I think the secret really is in that slice of gherkin that a burger should be topped with. Joking aside - good minced beef has lots of flavour and sometimes, but sometimes, it can beat an average steak for me."

I love the complex blend of seasonings used to flavor the beef in these sliders, especially the addition of parmesan cheese. It really helps to bind the meat together while also keeping it juicy and moist. I use a lot of parmesan when I make meatballs, but never thought to use it in a burger before. The homemade buns look very impressive as well, a cut above the standard (and flavorless) hamburger buns you get on the shelf at the supermarket!
