- 1 tablespoon vegetable oil

Layer half the tortilla with the cheese, chicken and green onions. Fold the tortilla in half over the filling.

Meals like this are just great because one can literally have whatever you feel like. I prepare everything and then we each put together whatever we want on our tortillas or in pita breads. In summer adding tomato and crunchy salad greens is very good and so are avocado slices. In colder weather we have used roast veg. Literally Whatevers In the Fridge.

I love the name of this recipe, and what a great way to make a healthy dinner while using up what you have left in the fridge! I often make this for a quick snack or lunch too, and grill them on my panini press. I feel like there are so many combinations that could work with this - different types of cheese, different veggies, hot or mild sauce, jalapenos... the list goes on! A fun way to make a Mexican meal part of the weeknight repertoire!

This is a perfect answer for when I'm standing in front of the fridge, wondering what to eat. We usually have tortillas around, and meat and cheese are constants in our household. Since we both love Mexican cooking, we normally have a supply of queso blanc and queso fresco on hand. Both are perfect for making quesadillas. Thanks for the tip about lightly sprinkling salt on top of the cheese. I usually don't use much salt, but I should give that a try.

This is one my weekly go-to dinner options. We, too, use whatever leftover vegetables are in the fridge. Instead of folding over the tortilla I usually lay one tortilla down flat, layer the ingredients, and place a second tortilla on top. Fry on one side and then the other. Cut into wedges and enjoy! One tip my fianc taught me is to lightly salt the cheese before adding the top tortilla. It really brings out the flavor of the cheese. I like to dip the wedges salsa verde and sour cream if I'm feeling crazy! hahaha. Thanks for sharing!
