Pressure Cooker Salsa Verde Pork Tostadas
"These pressure cooker salsa verde pork tostadas are made from a FROZEN Costco pork sirloin roast. Your Instant Pot will turn this into tender, flavorful, and EASY dinner in about an hour and a half.We buy these Costco pork sirloin roasts ALL the time. With 7 kids, you’d better have a Costco or Sam’s Club close by, or you’ll never stop making grocery store runs. Bulk in clearly in the cards for me for years and years to come."

My wife and I have debated getting an Instant Pot (which is what's used by the writer of the recipe) but it doesn't work for the canning purpose she intended, so we're content to stay with our slow cooker. The recipe is easily adaptable to a slow cooker, and should produce a yummy result. I wasn't familiar with the Spiceologist brand, and I'll keep a lookout for it since I'm always interested in new spice blends. I'm definitely going to be trying this out.

Mmmm, very tasty and the children loved that they could put whatever they wanted in to their tacos (we did not have any tostada shells). Our meat was not frozen so the cooking time was a little bit shorter but it still took longer than I usually like to spend on a mid week meal,. Next time we will have it over a weekend and I think we will probably add some fresh chopped garlic and perhaps a little chopped chili too.
