Maple Walnut Twice Baked Sweet Potatoes

From the Blogger: “These twice baked brown sugar maple walnut sweet potatoes are the perfect spin on sweet potato skins! They're made more healthy with maple syrup and Greek yogurt and are so easy to put together. They are a great idea for fall party appetizers, tailgating, and football snacks or even as a new Thanksgiving side dish. Your family and friends will LOVE these! They're gluten free, vegetarian and absolutely delicious for the holidays - I'm sure you'll make them again and again!”

I always find it funny when I come to a recipe and then realize I have already commented on it goes to show how great some of the recipes are! My family is actually using this recipe as an appetizer for Thanksgiving this year since we loved it so much last time we made it. See below for my tips!

So delicious! I do not like syrup so we used a little extra brown sugar. They are not at all difficult to make and the result is a very appetizing side dish to go with just about anything. We had ours to go with a weekend barbecue and they disappeared pretty quickly so it seems everyone enjoyed it as much as I did.

We always seem to think that potato skins should be savory and topped with bacon bits, cheese, chives, sour cream, etc. But this sweet take on that popular appetizer is refreshing and healthy! I love the use of so many types of nuts. Be careful of loading the potatoes up with too much sugar or butter. Instead, focus on the natural spices like pumpkin pie spice, cinnamon, and nutmeg. They provide all the flavor you need! Thanks for this great recipe!
