    Crispy Hobo Potato Skins

    You won't find cheaper and easier baked potato recipes than these Crispy Hobo Potato Skins. With only 5 ingredients, much of which you can find in your pantry or on hand in the kitchen; it's the ideal frugal recipe.

    Ingredients

    • 6 medium potatoes (about 2-pounds.)
    • 1/4 cup melted margarine
    • 1 tablespoon soy sauce
    • salt and pepper to taste

    Instructions

    1. Preheat oven to 400 degrees F.
       
    2. Scrub potatoes thoroughly and pierce with a fork. Bake until tender (about 45 minutes). Cool, then cut in quarters lengthwise and then half crosswise to form 8 sections.
       
    3. Scoop flesh from skins leaving 1/8-inch shell. Increase oven temperature to 500 degrees.
       
    4. Mix margarine and soy sauce together and brush on both sides of the skins. Sprinkle with salt and pepper.
       
    5. Place on baking sheet and bake until crisp (about 10 minutes). Serve with your favorite dip.
