Tofu "Egg" Salad
"Now that it is January and the holidays are done, it is time to start eating more healthy. And what better way to start than with a healthy no cook tofu “egg” salad that is the perfect lunch or dinner. This tofu salad tastes similar to an egg salad, only a little smoother. It is the perfect meal for any type of diet, to make it gluten-free or low-carb serve it on a lettuce wrap or gluten-free tortilla. Or if you would rather eat it like an egg salad, you can make it into a sandwich."

- 1 (14-ounce) extra-Firm Tofu, drained and pressed
- 1 cup vegan mayonaise
- 2 dill pickle spears, diced
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 1 teaspoon garlic powder
- 1 teaspoon dried dill
Drain and press tofu.
Place tofu into a blender and add in the remaining ingredients.
Pulse until all ingredients are combined and smooth.
Serve as a sandwich or as a lettuce wrap.
