"Found this little gem of a recipe the other day while on Pinterest. I have to say that I am not the biggest fan there ever was of sweet potatoes, but I LOVE this recipe for Stuffed Sweet Potatoes with Roasted Garbanzos and Garlic Sauce. There is such a burst of flavors, that even the pickiest eater will love it. It is from the Minimalist Baker…( you can never go wrong with her recipes)….I have to admit that I supremely passed the line with the garlic in the garlic sauce, which made my breath tremendous afterwards. Make your sauce as garlicky and non-garlicky as you want, because when it comes down to it…any sauce is great sauce!! Also, make sure you eat the skin…that is where the majority of the vitamins are, so scrub em’ well before hand."
