Ah, yes - you CAN make it with red cabbage, too. The visions of heads upon heads of cabbage and special crocks necessary for the exercise are a vast exaggeration. A bit like making jam, you can shred barely a head with a couple of garlic cloves at a time and throw it in one medium sized jar. It’s easy. And it doesn’t smell the house out, honest."

Hmmm, my fianc loves cooked sauerkraut but I have refused to make it for him because our house is SO tiny and it would smell for days-lol. This promises not to do this, though, and it's like making jam, which I am good at. A quick glance at the recipe and I think my fianc would definitely appreciate this. He likes to eat it on pumpernickel in a sort of faux-rueben (we don't eat meat). I'll have to think about it some more though-I don't want a stinky house. Just kidding. I love to cook for my guy! Thanks for sharing!
