Using up leftovers is noble and leftover-based dishes are often tastier than what they were born as. Special fried rice is just - special. I don’t cook rice often but when I do, it’s in double quantities. I used to be slightly worried about those mysterious deadly spores that were born in boiled rice standing around - but you’re safe if the rice goes to the fridge pronto and gets reheated only once, the very next day."

I hate wasting food and this is a great idea to use up leftovers. This is great for lunch the next day with whatever you had for dinner the night before. I agree that if you look after rice properly you can warm it the next day without a problem. I don't know about you but when I make rice for the family there is always some left. I'm going to use it up like this for a change.

This looks really good! We always order fried rice when we get chinese takeout and I'd love to be able to make it at home too. I'm not sure what groundnut oil is, but I'm guessing that I could substitute any light oil instead? I love recipes that allow you to switch out ingredients or use whatever is in the fridge! This is a great way to pack alot of veggies into a meal, and this would be a great side dish or main meal! Yummy!

Oh, very nice! This is a really good basic fried rice recipe. Adding the egg is great and the sauce really finishes the dish off beautifully. What is always good about fried rice is that you can really add anything that you happen to have in the fridge or pantry. I ground up 2 leftover chicken breasts and added some chopped cashew nuts near the end of the cooking. Delicious!
