    Old Country Cabbage Soup

    When you're looking for easy soup recipes that are budget-friendly and delicious at the same time, a great place to turn is to simple cabbage soup recipes. This Old Country Cabbage Soup has a ton of flavor but doesn't cost a ton to make. We love cheap soup recipes because they fill you up without breaking the bank and this awesome cabbage-loaded soup is one of our all-time favorites.

    Cooking Time3 hr

    Ingredients

    • 1/2 head firm cabbage, cut in thin wedges
    • 16 ounces sauerkraut, drained and rinsed
    • 1 (14-ounce) can chopped tomatoes
    • 4-6 slices bacon, cut into 1" pieces
    • 4 ounces barley, or as needed to taste

    Instructions

    1. Line the bottom of a large soup or stock pot with the bacon.
       
    2. Layer cabbage, kraut, tomatoes and barley, repeating until all ingredients are used. The top layer should be cabbage.
       
    3. Simmer on low heat on back of stove until cabbage is soft and barley is cooked, about 2-3 hours.
       
    4. Serve with boiled potatoes.

    What is done with the bacon?
