Ingredients
- 1/2 head cauliflower, cut into bite sized florets
- 1 1/2 cup panko bread crumbs
- 3/4 cup finely ground Parmesan cheese
- 2 large eggs, whisked

Preheat oven to 400F. Line a large baking sheet with parchment paper.

Add panko and cheese to a large bowl and then mix together until thoroughly combined.
Pro Tip: You can use shredded Parmesan cheese and put it through a food processor until the crumbs are the same size as the panko bread crumbs. -
Dip cauliflower in egg mixture and then shake a few times so that excess egg drips off. You don't want to dampen your breadcrumbs with excess egg because then they won't stick to the cauliflower.

Roll in bread crumb mixture until fully coated and place on a baking sheet . You may need to press on the coating to help get it to stick to the cauliflower bites. Repeat until all cauliflower is coated.
Note: The Kikkoman brand for panko crumbs is preferred for even baking. -
Bake for about 20-25 minutes until coating is a dark golden brown and crunchy.

Having veggies as a snack is so much better than your typical junk food available today and with yummy options like this why would you want anything else? Putting parmesan in the food processor is a great idea so they will blend in better with the breadcrumbs and I love that these are baked and not fried. Do you think this would work out the same with broccoli as well as cauliflower?

These cauliflower bites look so yummy. I do like cauliflower but it is nice to see them cooked differently. I think adding cheese to the breadcrumbs is a nice twist too and I like the fact that these are baked and not fried. Imagine them served with a nice creamy dipping sauce?
