Worlds Easiest Roasted Potatoes

Sometimes a simple side dish can take an ordinary meal and make it extraordinary. That's definitely the case with the World's Easiest Roasted Potatoes. Their flavor is out-of-this-world delicious, but they're oh-so-simple to prepare. All you need are the right seasonings and about half an hour in the oven. That's all it takes to make this oven roasted potato recipe, which is one of the best ways we've found to serve up a potato side dish. For other ways to season this dish, take a look at the notes section. My favorite part about these potatoes was the seasoning. I loved the Italian flavor combination of oregano and rosemary. Potatoes can sometimes be bland, but these were full of flavor. I also loved how the outside was nice and crispy but the inside was still tender. That's a great combo in my opinion. This is truly one great roasted potato recipe.

I made these potatoes with Crispy Crusted Pork Tenderloin and Roasted Vegetables.

Ingredients

  • 2 pounds potatoes
  • 1/4 cup olive oil
  • 1 tablespoon dried herbs (I used garlic powder, oregano, rosemary, and parsley)
  • 1/2 teaspoon salt

Instructions

  1. Preheat oven to 425 degrees F.
     
  2. Mix oil, herbs, and salt in a large bowl. Add potatoes and toss to coat.
     
  3. Transfer potatoes to a sheet pan.
     
  4. Roast for 20 - 25 minutes, turning pieces during roasting so all surfaces brown.

 


Variations of this recipe include the following seasoning combinations:

Greek: Garlic and oregano with Greek olive oil.

French: Garlic and rosemary.

Italian: Garlic and marjoram.

Mexican: Garlic, oregano, cumin, ground chili pepper and corn oil.

Other than mashed, roasted potatoes have to be one of my most favorite sides that are so easy to prepare and super flavorful. I love that the skin is on the potatoes in this recipe but I don't think I've ever used oil when roasting my potatoes. I like to toss mine in a little chicken or beef broth...depending on what I'm serving it with and a few herbs and it's so good. I'll have to give the olive oil method a try.

I made these to go with some barbecued ribs that we had last night. It was an amazing pairing! I used Rosemary, onion powder, and garlic. I think you could use almost any spice for these, and they would still turn out amazing! This is a great recipe to customize for your taste. This is definitely a keeper for me. It's just one of these easy recipes that taste amazing and is different each time.

Yummy these roast potatoes look scrumptious. They would go perfectly with the roast leg of lamb I was looking at before. I like the fact that they are cooked in the oven as you can cook them whilst you are cooking the roast or if you can't fit it in the oven then you can cook them after you've taken out the roast while the roast is resting and you are finalizing the meal.

The garlic, rosemary, oregano, and parsley are my go to herbs when oven roasting chicken pieces, so this potato recipe is a match made in heaven! You could even do them on the same pan to give them a little bit of the chicken flavor, just like my grandmother used to do. So much healthier than other potato sides, like traditional mashed potatoes or French fries, for example.

Roasted potatoes are a great side dish or even a main dish! They are easy to make and this recipe takes less than an hour to make. You can add peppers and other veggies if you like. I like that the author provides other variations on this basic recipe using the garlic with other seasonings.
