Roasted Tri-Color Potatoes are a great rustic oven roasted potatoes recipe that your guests will swoon over.   • 2 pounds multi-colored potatoes, halved
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons chopped fresh herbs de Provence
  • 3 sprigs of thyme
  • Coarse salt and freshly ground pepper


  1. Preheat oven to 450 degrees F.

  2. Combine potatoes, olive oil, and thyme in a large bowl. Season with salt and pepper and toss until well combined. 

  3. Place potatoes on La Cuisine Cast Iron Enameled Roasting Pan.

  4. Roast until browned and tender, 45 to 60 minutes.

This is a really versatile basic recipe for roasting fall root vegetables as well, such as acorn squash, yams, carrots and brussels sprouts. I love how it looks with the different colored potatoes, just lovely. I'd use it as a side dish with steak or brisket, or even with chicken. It makes a lot I wonder how well it freezes.
