Roasted Tri-Color Potatoes

Preheat oven to 450 degrees F.

Combine potatoes, olive oil, and thyme in a large bowl. Season with salt and pepper and toss until well combined.

This is a really versatile basic recipe for roasting fall root vegetables as well, such as acorn squash, yams, carrots and brussels sprouts. I love how it looks with the different colored potatoes, just lovely. I'd use it as a side dish with steak or brisket, or even with chicken. It makes a lot I wonder how well it freezes.
