- 2 pounds multi-colored potatoes, halved
- 2 tablespoons extra-virgin olive oil
- 2 tablespoons chopped fresh herbs de Provence
- 3 sprigs of thyme
- Coarse salt and freshly ground pepper

Preheat oven to 450 degrees F.
Combine potatoes, olive oil, and thyme in a large bowl. Season with salt and pepper and toss until well combined.
