BLT Bucatini Pasta Salad
"BLT Bucatini pasta salad is a nice change in your summer pasta salad rotation! Filled with bacon, lettuce (or spinach, in this case), tomato, and a quick and easy sundried tomato sauce, its full of flavor and feeds a crowd! This blt bucatini is straying away from a traditional blt in quite a few ways, but one of the biggest is that I used baby spinach instead of lettuce. It also has a healthy heaping of Parmigiano Reggiano, and a super flavorful sun dried tomato sauce. You can customize this as much, or as little, as you want. If you are an onion fan, some chopped red onions would be amazing in this dish."

This looks yummy! I'm always on the lookout for a good pasta salad, and since I love BLTs, this is something I'd definitely consider making. Due to some medications I'm taking, I have to restrict my intake of spinach (which is a pain, since I really love spinach), so I'd probably go back to the original idea and use some Romaine lettuce for the leafy green part of the salad. I'm not that familiar with bucatini, so I'll need to search out some to try

I tend to use baby spinach leaves a lot myself when making pasta salads, since they contain much more nutrition than standard iceberg lettuce, have a great flavor, and they tend to hold up to the summer heat outdoors much better. Lettuce tends to wilt quickly in the heat, and it releases a lot of water into the salad, essentially ruining the dressing. This pasta salad is savory and has a great flavor from the sundried tomatoes - I might even try it hot as a main course!
