Summer salad recipe are always easy to make and use fresh vegetables. I like that this Amish Broccoli Salad used several summer vegetables and the presentation of the dish is very colorful. I intend to try this as soon as the broccoli crowns in my garden.

I don't care for cauliflower in the regular state, though I like it when it's riced. Go figure. My wife, though, loves cauliflower, and we both love broccoli and bacon, so this will definitely get made up in our house. I'm also curious about substituting some sort of pasta for the cauliflower. Bowties or rotini might work. Something new to try in the kitchen!

This Amish Broccoli Salad with Bacon looks like a very impressive alternative to the traditional potato salad. My entire family loves broccoli, cauliflower, and bacon so I will not have any trouble introducing this at the dinner table. The ingredients are simple and easy to put together and the dish is very colorful.

This looks like a summer salad that I would totally love and my family would totally balk at. I think they would be fine with the broccoli part but not the cauliflower. Has anyone substituted the cauliflower with another ingredient and how did it come out? I am trying to think of something other than pasta though pasta would be delicious!

Broccoli is a super food. I've said it before and I'll say it again. If you eat just one vegetable, it should be broccoli. The thing is it doesn't taste that good but this broccoli salad makes it taste truly delicious by adding in a few simple ingredients. Hurrah for broccoli salad!
