Frozen Pea Salad

Ingredients

  • 1 large head cauliflower
  • 1 large bag frozen English Peas
  • 2 bunches green onions or scallions
  • 3 cups real mayonaise
  • 2 pkgs. Buttermilk dressing mix
  • 1 1/2 cup milk (or less)

Instructions

Put frozen peas in a colander to begin to thaw. Do not rinse or cook. Shake occasionally to get the ice out. Combine mayonaise and Buttermilk dressing mix with a wire whip. Gradually add milk. You want this dressing to be thick, about the consistency of dip or just a little thinner, but not pourable. Put in refrigerator to set. Clean cauliflower and green onions. Drain well. Cut cauliflower into bite-sized chunks or to suit you. Use the stems of the flowerettes, but not the core. Chop green onions using as much of the green as possible. Add thawed, or partially thawed, frozen peas to the cauliflower and green onions. Add all of buttermilk dressing and mix well. Any water left on the peas willthin the dressing. After a day, this salad won't be quite as cunchy, but it will last almost a week in the fridge.
