Summer salad recipes don't always have to be traditional green salads. Copper Pennies is a marinated salad made with tomato dressing (the "Copper" part of the recipe) and cooked carrots (the "Pennies"). It's a refreshing and delicious dish to serve as part of a summer dinner. The flavorful dressing is made primarily out of tomato soup. Make this recipe the night before a barbeque, let it marinate overnight, and you have a great salad ready to go the next day. If you like tomatoes and carrots, then you'll love this Copper Pennies recipe.

I have had this recipes for about 30 years, if you love carrots you will be over the moon with this.. it is the best , and you can can it too, I canned this and open the jar about 10 months later and it was just as good as when I 1st made it.. Linda in az
