Secret Copycat Popeye's Fried Chicken

If you love the flavors and texture of the fried chicken from Popeye's but don't live anywhere near the eatery, don't worry because now you can make the delicious chicken dish right in your own kitchen with this Secret Copycat Popeye's Fried Chicken recipe. Made with a few top secret ingredients like crushed cornflakes cereal and Italian-style salad dressing, this unique fried chicken recipe is one that will make your mouth water as soon as you taste it. Ingredients

  • 3 cups self-rising flour
  • 1 cup cornstarch
  • 3 tablespoons seasoned salt
  • 2 tablespoons paprika
  • 1 teaspoon baking soda
  • 1 package Italian-style salad dressing mix
  • 1 1/2 ounce package onion soup mix
  • 1/2 ounce package spaghetti sauce mix
  • 3 tablespoons sugar
  • 3 cups corn flakes, crushed slightly
  • 2 eggs, well beaten
  • 1/4 cup cold water
  • 4 pounds chicken, cut up

Instructions

  1. Preheat oven to 350 degrees F.
     
  2. Combine first 9 ingredients in large bowl.
     
  3. Put the cornflakes into another bowl.
     
  4. Put eggs and water in a 3rd bowl.
     
  5. Put enough corn oil into a heavy large skillet to fill it 1" deep. Turn on heat and get oil to hot temperature.
     
  6. Grease a 9x12x2-inch baking pan. Set it aside.
     
  7. Dip chicken pieces one piece at a time as follows: 1) Into dry coating mix. 2) Into egg and water mix. 3) Into corn flakes. 4) Briskly but briefly back into dry mix. 5) Drop into hot oil, skin-side-down and brown 3 to 4 minutes on medium high heat. Turn and brown other side of each piece. Don't crowd pieces during frying.
     
  8. Place chicken pieces in prepared pan in single layer, skin-side-up. Seal in foil, on 3 sides only, leaving 1 side loose for steam to escape.
     
  9. Bake for 35-40 minutes, removing foil then to test tenderness of chicken.
     
  10. Allow to bake uncovered 5 minutes longer to crisp the coating.

 

Note: Leftovers refrigerate well up to 4 days. Do not freeze leftovers. Leftover coating mix (first 9 ingredients) can be stored at room temperature in covered container up to 2 months.
