Pressure Cooker Onion Soup

Ingredients

  • 3 tablespoons olive oil
  • 2 pounds onions, thinly sliced
  • 1 tablespoon flour
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon brown sugar
  • 1/2 cup beer
  • 6 cups beef stock
  • Croutons or dry bread
  • Provelone cheese slices

Instructions

Heat oil in the pressure cooker and saute the onions until well browned (about 20 minutes) stirring frequently. Add flour, Worcestershire sauce and sugar. Stir well. Add beer and simmer for 5 minutes. Stir in the stock. Cover the Pressure Cooker. Set the Pressure Selector on High (if equiped). Cook at pressure for 20 minutes. Use the Normal or Quick Release Method. Top with toasted bread croutons and cheese and broil until cheese is bubbly.

This sounds like a heavenly soup. I love the fact that it is cooked in beer. I can't wait to try this. The beer flavor must be so nice. It certainly seems very decadent. I have never cooked anything like this before in beer. I'm very excited to try it.
