Ingredients

  • 1 chicken breast
  • 1/2 cup water or broth
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 cups Mexican cheese
  • 1/4 cup chopped jalapenos
  • 1 can beans, rinsed and dried

Instructions

  1. Place chicken breast in the pressure cooker, and add 1 cup water.

  2. Cook on "pressure cook" for 5 minutes.

  3. Preheat oven to 400 degrees F.

  4. Lay ½ a bag of chips on a cookie sheet.

  5. Sprinkle cheese on top.

  6. Add beans and jalapenos.

  7. Place shredded chicken on top.

  8. Top off with more cheese.

  9. Bake for 10 minutes, or until cheese melts.

I've seriously got to consider investing in a pressure cooker...chicken in 5 minutes, no way! This recipe sounds delicious but I would think the chicken would be a little bland without seasoning wouldn't it? Maybe if you add a little cumin in the pressure cooker with the chicken it could infuse the flavor into it that way. I'm still in disbelief that cooking the chicken only takes 5 minutes...and am excited to get a pressure cooker and try it out myself!

These were delicious. Just the right about of spicy and SO easy to make
