Chicken Chaucer

  • 3 lbs. chicken places
  • 1 lb. tomatoes, chopped
  • 2 T. butter
  • 2/3 c. chicken stock
  • 2 T. olive oil
  • 1/2 c. dry white wine
  • 2 sm. onions, chopped
  • 1 T. tarragon, chopped
  • 1 clove garlic, minced
  • 1 T. parsley, chopped
  • 1/4 lb. fresh mushrooms, sliced
  • 2 T. flour
  • 1/2 c. cream


Heat cooker; add butter and olive oil and brown chicken. Remove chicken. Saut onion and garlic until golden brown. Add mushrooms and cook for 1 minute. Add chicken, tomatoes, stock, wine, tarragon and parsley. Close the lid. Cook for 15 minutes. Remove the lid. Place chicken on serving platter. Blend flour with cream and stir mixture into sauce. Cook over medium heat until thick, stirring constantly. Pour over chicken and serve.
