I've found that using paper towel for the task of squeezing the spinach can be rather messy, and sometimes it's hard to avoid little bits of paper towel getting stuck in it. A clean bleached tea towel works best for me. This recipe looks so pretty, I might even serve it for Christmas! If you wanted, you could swap out some prosciutto for the salami, or even some thinly sliced deli ham.
