Ingredients

  • 3/4 pound pitted cherries or one 12-oz bag frozen cherries
  • 2 peaches, peeled and sliced
  • 2 tablespoons lemon juice
  • 3/4 teaspoon ground cinnamon
  • 2 tablespoons quick-cooking tapioca
  • 1 teaspoon vanilla extract
  • 3/4 cup sugar
  • 1 3/4 cup all purpose unbleached flour
  • 1 1/2 teaspoon baking powder
  • 3/4 teaspoon salt
  • 2 tablespoons sugar
  • 2 tablespoons reduced-fat margarine
  • 2/3 cup non-fat milk

Instructions

  1. Mix cherries, peaches, lemon juice, cinnamon, tapioca, vanilla and sugar together and place in a nonstick 8-inch-square pan; prepare crust.
     
  2. Preheat oven to 425 degrees.
     
  3. Stir dry ingredients together; add margarine and mix until it is crumbled.
     
  4. Stir in milk until the mixture forms a ball and knead 6 times.
     
  5. Roll out to a thickness of 1/2 inch.
     
  6. Using a biscuit cutter, cut dough into 8 biscuits.
     
  7. Place biscuits over filling and bake about 35 minutes, until golden.
