If I had a stop watch I think we would have set a record for the fastest disappearing pie. This Cheater's Chocolate Coconut Cream Pie is so good that it was entirely devoured by 5 people in one sitting! Simple and quick to make too which always gets my vote. The only baking is for the pie crust then, once everything has been mixed, all the rest happens in the refrigerator. No fuss and really delicious!

Cheating is totally allowed when it leads to an amazing chocolate coconut cream pie like this one! I use instant pudding in another recipe and have made the mistake of buying regular pudding instead so be careful! It greatly changes the consistency of the dessert, as well as the amount of time the recipe will take to create.
