Blackberry Cobbler

Ingredients

  • 2 quarts blackberries
  • 8 ounces sugar
  • 2 ounces tapioca
  • 10 ounces water
  • 2 ounces unsalted butter
  • 1 tablespoon lemon zest
  • topping of your choice

Instructions

  1. Preheat oven to 350 degrees F.

     
  2. Combine all ingredients, tossing the berries gently until well coated with the other ingredients.

     
  3. Transfer to a lightly buttered half-size hotel pan (8" x 9" x 7/8") then set aside for at least 30 minutes before baking.

     
  4. The cobbler can be topped with flaky pie dough, biscuit dough or streusel topping before baking.

     
  5. Bake at 350 degrees F until the berry mixture bubbles and the crust is appropriately browned, approximately 40-50 minutes.

What is a half-size hotel pan?? Giving pan sizes in inches would be much more appropriate and helpful.
