"This Skillet Tortellini with Mushroom Cream Sauce is made in one pot, and is filled with chicken, mushrooms and herbs. A great weeknight dinner, or make it for a Sunday family dinner. Add in your favorite vegetables for a complete one-pot meal, or serve with a fresh green salad. I LOVE a good skillet meal for a quick weeknight dinner. First melt some butter in a medium stock pot, and toss in some sliced mushrooms. Let the mushrooms get nice and brown, and then add in the rest of the sauce ingredients and the tortellini. Let it simmer over low heat, stirring frequently, until the tortellini is done. Add in copious amounts of reggiano, and enjoy."

This Skillet Tortellini with Mushroom Cream Sauce recipe has quickly become one of my favorite "one pot wonder" meals. It's a great weeknight meal that is so full of flavor, and a great way to use up leftover chicken without feeling like you're eating leftovers. I like to serve it with a tossed green salad, and of course, some crispy bread.

We did not have any chicken so made a vegetarian version of this by using broccoli and cauliflower instead of chicken and it was really very yummy. The sauce is so delicious that simply thinking about it now is making me lick my lips, lol! It is a lovely meal that everyone in the family enjoyed. Next time we will try the chicken version which is sure to be just as good.
