NotesIf you are vegetarian, you can omit the pork loin. Also, using a vegetarian (rennet-free) parmesan cheese is a great idea to make this purely vegetarian. Add chicken, shrimp, salmon, or sausage to this pasta for additional protein. Peas, broccoli, and spinach will make this a little healthier. If you love bold flavors, you may use shiitake, portobello, or porcini mushrooms for a depth of mushroom flavor.

Ingredients

  • 1 pound penne pasta
  • 2 tablespoons olive oil
  • 8 ounces button mushrooms
  • 2 cloves garlic
  • 2 ounces onions
  • 2 tablespoons flour
  • 1 cup Oat milk
  • 1 cup parmesan cheese
  • 1 cup fresh parsley
  • 4 ounces pork loin
  • Salt and pepper to taste Instructions

Instructions

  1. Cook the pasta per package instructions.

  2. Make the sauce while pasta cooks. In a large saucepan, heat olive oil.

  3. Cut the pork loin into bite-sized pieces and add to the saucepan.

  4. Sear until it browned.

  5. Add mushroom and sauté for 5 minutes.

  6. Add minced garlic and chopped onions.

  7. Cook until fragrant.

  8. Add flour to the saucepan and stir to combine; cook for 30 seconds.

  9. Add 1/2 cup of milk and stir to incorporate.

  10. Once incorporated well and stir in the remaining milk.

  11. Bring the sauce to a simmer and cook for 5 minutes.

  12. Remove the sauce from the heat and add the grated parmesan cheese.

  13. Stir to combine.

  14. Add the cooked pasta.

  15. Season with salt and pepper to taste.

  16. Add chopped parsley.

  17. Serve with your favorite crusty bread.
