I like really simple pasta recipes and this is about as minimalist as it gets. I hadn't heard of mizithra cheese before, and the nearest Whole Foods is ninety minutes away, but I'm wondering if goat cheese could be substituted as well. The recipe mentions Parmesan, which is readily available, but I'm ready to experiment with some new cheeses.
