Baked Blueberry Pancake

Baked Blueberry Pancake is a unique breakfast recipe, combining blueberry and cinnamon flavors. The earthy breakfast recipe provides a great way to start off your morning.

Ingredients

  • 3 tablespoons butter
  • 3 eggs
  • 2 cups milk
  • 3/4 cup flour
  • 1/4 cup sugar
  • 1/4 teaspoon salt
  • 2 cups blueberries
  • 1/4 cup sugar
  • 1/4 teaspoon cinnamon

Instructions

  1. Preheat oven to 425 degrees F.
     
  2. Heat butter in a 10-inch cast iron skillet or other heavy pan until it is bubbly.
     
  3. Beat eggs with 1/3 cup of the milk, flour, salt and sugar until smooth.
     
  4. Add remaining milk.
     
  5. Pour into hot skillet.
     
  6. Bake 20 minutes.
     
  7. Toss blueberries with sugar and cinnamon.
     
  8. Remove pancake from oven and sprinkle with blueberries.
     
  9. Return to oven and bake 10 to 15 additional minutes until brown and puffed.
