Microwave Peanut Brittle


  • 1 cup sugar
  • 1/2 cup corn syrup
  • 1 cup salted Georgia peanuts
  • 1 tsp butter or margarine
  • 1 tsp vanilla
  • 1 tsp baking soda


In an 8 x 12-inch glass baking dish, mix sugar and corn syrup. Microwave on high for 4 minutes. Stir with a wooden spoon. Microwave 4 minutes more. Stir in peanuts, butter and vanilla. Microwave 2 minutes on high. Add soda and stir until light and foamy. Pour onto greased baking sheet and spread thin. Allow to cool completely. Break into small pieces. Store in an airtight container in a cool place. Makes 1 pound.
