Microwave Peanut Brittle


  • 1 cup raw peanuts
  • 1 cup sugar
  • 1/2 cup white syrup
  • 1/8 teaspoon salt
  • 1 tablespoon butter
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda


In 1 1/2 quart casserole cook the peanuts, sugar, syrup and salt on high for 4 minutes. Stir, then cook 3 minutes 45 seconds. Then add butter and vanilla and cook 2 minutes. Stir in soda until light and foamy and pour on greased cookie sheet. Break when cool.
