Italian Herbed Potatoes


  • 2 green onions, sliced
  • 1 tablespoon margarine
  • 1 teaspoon dried parsley
  • 1/4 teaspoon dried Italian seasoning
  • 1/8 teaspoon salt
  • 3 cups loose-packed frozen hash brown potatoes
  • 1/4 cup Parmesan cheese


In a 1-quart micro-wave safe casserole stir together green onions, margarine, parsley flakes, Italian seasoning and salt. Cook, covered on high, or 100% power for 1 2/2 minutes or until onions are tender. Stir in frozen potatoes. Cook, covered, on high for 5 to 7 minutes or until heated through, stirring once. Add Parmesan cheese; toss to coat.

This is such an easy recipe to follow! Being able to make it in a microwave makes it even better. This is another great recipe for frozen hash browns. I am not sure how many servings this would make. You could probably double the recipe and place in a 2 quart dish if you needed more.
