Lamb Chops


  • 4 lamb chops, 1 1/2" thick
  • 1 cup cashews ( pulverized in a food chopper)
  • 1/8 tsp ground cloves
  • 1 Tbsp crushed garlic
  • 1 Tbsp Italian bread crumbs
  • 1 egg with 2 Tbsp milk for a wash
  • 1/8 tsp cayenne pepper
  • 1/4 cup peanut oil
  • 4 Swiss cheese slices
  • 1 red onion, sliced
  • 1 red bell pepper, sliced
  • anchovy fillets, optional


In a heavy skillet heat the oil until almost smoking. In a separate dish mix cashews, cloves, bread crumbs, pepper. Dip the lamb chop into egg wash then into dry mix. Place into hot skillet for 1 minute per side, then remove and place on a broiling dish. Top with the rest of the ingredients (cheese goes on first) and end with the anchovy. Broil in the broiler for about 12 minutes. Serve hot.
