Mix paprika, oregano, thyme, cinnamon, pepper, salt. Rub some olive oil on meat. Rub with the spice. Put everything in a clay pot for the oven, or a dutch oven or anything that can be covered (at least with aluminum foil) - meat must be placed really tight. Heat oven to 450F. Put meat in oven and after about 45 mins start reducing temp until you drop to about 300 degrees F, in about 2 hours. Leave for another 2. In Cyprus we usually cook this in traditional outdoor wood heated ovens - Really big ones that can take up to 50 pounds of meat - usually for parties.
