Ingredients

  • 4 veal cutlets
  • salt
  • 1 tbs. flour
  • 1 egg
  • 1 1/2 ounce breadcrumbs
  • 1 3/4 ounce fat for frying
  • 1/4 pint water
  • 3 tbs. sour cream
  • chanterelles or soletus edulis, fried in some butter

Instructions

Bread the cutlets with salted beaten egg, flour and breadcrumbs, and fry it from both sides until brown. Give them on a plate and keep warm. Now you add the water and sour cream to the brown fat in the frying pan, stir. Top the cutlets with a heap of mushrooms and pour some sauce over the whole lot. Garnish with some parsley. Serve with pommes frites and green salad.
