Mint Thai Iced Tea

- Mint Infused Simple Syrup:
- 1 cup water
- 1 cup granulated sugar
- 2 springs fresh mint leaves
- Thai Iced Tea:
- Strongly brewed chai flavored iced tea, chilled
- simple syrup to taste
- coconut milk

Heat water in the microwave in a large measuring glass for 3-4 minutes. Be careful, it may not appear to be boiling but will be very hot. Stir in granulated sugar until completely dissolved. Add mint leaves and place into the fridge to cool completely.
In a large glass, pour desired amount of coconut milk into the bottom. Top with chilled, pre-brewed, chai. Stir well and add ice. Add simple syrup to sweeten to taste. Serve immediately.

We have way too much mint growing in the garden, the more I pull it the more it grows. We dont use a lot of it so I would love to try this mint iced tea, I also love coconut milk, it really sounds tasty! Could the mint infused simple syrup be used in anything else?
